So yesterday was a momentous day!  We have been here how long?  6 weeks or so?  8?  Anyway, our Utah insurance has no providers here so we had to change health insurance companies.  Jer submitted our paperwork to the government (who are in charge of our retirement) expressing our wishes to change companies and we started our wait when we got here.  We hadn't heard from the government about it for this long and he finally called them yesterday and finally got a person to talk to and that person said they had no record of any paperwork, but would he like to make the change over the phone?  !!!?  Yes he would.  And so now we are finally covered here locally with health insurance.  So now we can finally make our move complete by officially changing our residency status.  Jer didn't want to change it till he was sure we could be covered by local insurance.  Yesterday he went to get the cars inspected and this week we can get them registered and get our Texas driver's licenses. 

And we can begin the process of finding a doctor nearly as good as Dr Joe Murdock and a dentist nearly as good as Dr Bruce Murdock.  At our ages that's a pretty important thing. 

In other news, Jer is still working long hours but has some mornings free so that's nice to have him here then.  Today he works from 2 to 9.  But he has this Sunday off.   These are our recent Sunday activities:  Jer doing a new puzzle and me indexing. 



When the missionaries came to dinner they were so refreshing.  It was fun to have them here, but they challenged us to find someone for them to teach.  Of course.  And I prayed to find an opportunity to get closer to our neighbors here so I could maybe do that.  After I prayed that I was rummaging in a cupboard and found a bag of art supplies I had bought for Alice when she was here and had forgotten about.  Immediately I thought of the little boy upstairs about her age that may enjoy them.  So I took them up imagining a cozy time visiting with his mom and getting better acquainted.  Well the door was finally answered by his 21 year old sister who took the bag and closed the door.    So no cozy chat.  But a warming of the relationship?  Maybe. 


Then yesterday I remembered the little lady that moved in next to us.  She is a recent widow who sold her big house and downsized.  She came over one evening around New Year's worried about the noises outside and Jer told her it's just fireworks, not gunshots.  But I thought I could get better acquainted with her.  I have been needing a friend around to take walks with anyway.  So I decided to make some bread and offer her a loaf.  I had already been thinking of making some.  But I don't have my recipes so I looked up a couple online.  I made a batch and it was so salty!!  Then I made a second batch, hoping to get a loaf to take to her next door, and it was also too salty!  Jer said to throw them both out.  And you know how the man loves his salt.  So today I will try another batch when I buy more flour.  The second batch turned out really pretty, though.  I will use that recipe today but put in 1 tsp of salt instead of 2.

  1. Just out of curiosity, did the recipes call for kosher salt? Kosher salt is less dense and it tastes less salty than regular table salt.
